An A.S degree in Electrical Engineering implies you're headed for some type of technician job in the short term, and technicians need lots of hands-on experience with oscilloscopes, function generators, voltmeters, etc., as well as basic hand tools and specialized skills such as soldering. Although it is conceivable that one could acquire the needed equipment and learn to use it oneself, it's much better to do so in a school laboratory setting with a competent instructor.

My two years of high school electronics classes (very hands-on), coupled with laboratory classes while I was studying to get a BSEE proved invaluable. There are some things one simply cannot learn from books.
References :
Personal experience

EE is one of the few degrees that really rely on labs. You need to learn how to built and analyze circuits and there is only one way in doing that is by going to lab. Im about to graduate with a B.S in EE so I am talking from experience.
References :
If you want a 3 year diploma (sometimes called assoc deg. in other countries) from a community college, you may be able to do it online, and call yourself a technician or technologist afterwards.

If you want an engineering degree (bachelors) and desire to enter the engineering profession, expect to have to attend a University for 4 years, and do the labs. Make sure the University you choose is accredited by whatever engineering board grants engineering licenses in your jurisdiction.
